At Lianolia, the nobility of Parga's Venetian past meets the grounded richness of Epirotic heritage. Set among ancient olive trees by the Ionian Sea, with the Castle in view, the restaurant is embedded in its surroundings—where landscape, history, and design come together. The name derives from the Lianolia olive variety found in our gardens and throughout Parga, introduced to the region by the Venetians. Under the culinary direction of Georgianna Hiliadaki, a two-Michelin-starred chef, the menu is shaped through historical research and contemporary expression, bringing Venetian influences into dialogue with the depth of Epirotic cuisine.

CULINARY DIRECTOR — GEORGIANNA HILIADAKI

Chef Georgianna Hiliadaki is the only Greek female chef to have been awarded two Michelin stars and was ranked 4th Best Female Chef in the World by The Best Chef Awards in 2017, the same year she was named Best Female Chef in Greece—a distinction she has received multiple times since. A graduate of the University of Reading, she went on to study Culinary Arts and Restaurant Management at the Institute of Culinary Education in New York. She first gained international acclaim through Funky Gourmet, the restaurant that earned her two Michelin stars, and is also co-founder of OPSO in London, showcasing contemporary Greek gastronomy.

EXECUTIVE CHEF — STRATOS CHAITARIDIS

A career shaped by some of the most celebrated kitchens in Greece and beyond — the Andronis Hotels group in Oia, the iconic Makedonia Palace in Thessaloniki, and Hakkasan in London. For over a decade, he served as Executive Chef at West East Suites in Santorini, where his restaurant FlyAway was consistently recognised by the Greek Cuisine Awards (2020–2025) and the FlagInLife Awards. At Parga Beach Resort, he oversees the overall culinary vision — a contemporary, creative Mediterranean cuisine rooted in the exceptional produce of Epirus, built in close collaboration with local producers, to transform pure raw ingredients into an authentic, refined hospitality experience.
